Ricerca

Proteins and peptides from hemp seeds (Cannabis sativa L.). Development and optimisation of methods for extracting reserve proteins and study of the effect of cultivar/growing environment on protein profile and antioxidant power. Production of peptides through human-like in vitro digestion, fingerprinting with MALDI-TOF, and bioactivity assessment with in vitro tests and bioinformatic analyses.

Seed storage proteins in rice (ancient varieties) and cultivation systems. Quantitative and qualitative characterisation of proteins in grains, with a focus on how cultivation methods (conventional/organic/agroforestry) influence protein profiles and antioxidant activity. Support for projects on functional biodiversity in rice-growing environments through protein characterisation of specific cultivars. Seed analysis to assess how inoculation with different endophytic bacteria modifies the nutritional profile, focusing on the quantity and quality of the protein fraction (reserve proteins) and on any variations in the protein/peptide fingerprint detectable using proteomic techniques (e.g., MALDI-TOF).

Biochemistry of human milk and functional quality (donated and formula). Analysis of the impact of Holder pasteurisation on protein content in the aqueous and fat fractions and on the presence/variation of eNAMPT-Visfatin; study of the immunological role of milk fat globule membrane (MFGM) and comparison/evaluation of formula milks.
